In our house we have love for all kinds of dumplings. Michael will quite happily devour a whole order of beef and carrot dumplings from most of the restaurants along Dominion Road but we’ll also take a bowl of stew with floury cheese dumplings any day of the week. This week that day was Sunday.
There is something quite magical about making stew. It has this calming effect. Perhaps because it takes a little longer to cook or because you get to drink some of the wine that goes in the pot while you stir. Irish stews are traditionally any meat and veg combo you have to hand and can incorporate all those leftovers you have at the bottom of your fridge drawer. This adds to the magic. Taking little bits and pieces from the fridge and turning it into a hearty and warming meal makes you feel like you accomplished something.
