Aka The Carb Mountain.
I’m not even going to apologise for this. This bread was amazing. After being quite frustrated at having to use dry active yeast, I went ahead and defrosted some of my fresh yeast. It was a bit of a mission, I had to cut off a huge chunk and let it defrost and as usual it had that clay like consistency that is super gross but makes the best bread.
My next thoughts were, if you go to so much trouble to make some bread, you might as well add bacon and cheese. Surely someone has a quote about bacon and cheese making everything better?

Toast is possibly my favourite thing in the whole world.
It’s one of the reasons my diets always end in tears and why I’m forever avoiding bakeries. I cannot resist the smell of warm bread. Whether it’s straight out of the oven or in a toaster or under the grill. Crispy on the outside, fluffy in the middle. I want to make a house out of toast…any Bob’s Burgers fans? No…ok. Well toast is fantastic.
I have had a few bumps in my road these last two weeks or so (evident in the number of posts appearing on PlanetBakeLife) but I’m back on track now. It seems that life just got a bit much for a moment back there. I spent a lot of time thinking about what I want and that meant eating a lot of toast while pondering the big questions.

All of this self-reflection has lead me to bring you these 3 recipes today.
Sometimes toast with melted butter is all you need but other times, you need something a little fancier. No one will judge you for wanting something a little upmarket. Something to make your white wine look a bit classier while you veg out in front of Netflix. Even something as simple as toast can be made to look like it belongs on the menu of a cosmopolitan CBD restaurant.
I fully intend to serve these toasts to my friend next time they come around and I don’t particularly feel like cooking but know we need something to soak up that alcohol.

My friend and co-worker moved into his new flat with his girlfriend. Whoo! It looks lovely and they desperately needed a place of their own. No one wants to live with other people forever so it’s nice to finally find somewhere to call your own.
As a housewarming gift I gave them a jar of my Spicy Plum Chutney and a batch of these Pesto and Cheese Scones.
My co-worker likes the Pesto and Cheese Scones from the cafe across from our office so I thought a batch of his favourite snack would go down well in their new home. Apparently they didn’t last past the first evening and were merely crumbs by the morning. Oh well!

These are super easy to make and a little unique from other scones. These scones are actually an American Biscuit recipe that I have. It requires the scones to be folded in thirds which gives them a layered effect and makes them fluffier than the standard scone. The technique is actually super easy to master. It’s a good one to have under your belt as it’ll carry through if you’re making pastry at some point too.

We all have dirty secrets. Some times we need to tell those dirty secrets.
So here are my top three. I change into my PJs as soon as I get home from work. I am currently playing the Kendall and Kyle iOS game and I love it. I like to put cheese and bacon into most things.
That’s how it came to be that I was busy making cinnamon scrolls and then I looked at the dough and thought “What this really needs is some cheese…and some bacon.”. Then I put the sugar and the cinnamon away in the pantry and took out the bacon and cheese.
