Guys, it’s nearly my birthday. In a week I will have turned 27. So much is happening in such a small space of time and I’m really excited about all the future has in store.
At the moment that means spending weekend running around meeting friends and family, making wedding plans and DIY’ing a lot of our wedding elements. I’m very lucky to have a super talented fiancé who designed our invitations and made them very personal to our style and our feel. I have a MOH who is an expert baker. A day of co-ordinator who is amazing and is going to be doing my hair and make up on the day. And my parent are always supportive of our plans.
While the wedding planning is going really well and it’s moving at a fantastic pace, sometimes you need some down time. Enter these chocolate primal protein mix pancakes. We enjoyed these pancakes on Sunday morning before heading off for a full day of activities. They’re much heavier than most pancakes but that’s because of the protein mix. You’ll probably only need a few pancakes to keep you satisfied for much longer.

I’m going to be making my own wedding cake and I’ll be blogging a little bit about how we’re keeping food costs down. We’re prepared to get ourselves into debt over one day but we are having a big party with all of our family and friends. My mother-in-law will be flying out from the UK as well as my aunt. We cannot wait to show our foreign family what kiwi food is about and introduce my mother-in-law to some South African foods and traditions too.
If they’re lucky I might even make these pancakes for them too.

I won this Primal Protein Mix in Chocolate by The Honest Food Co from Melissa’s blog birthday giveaway and I’ve been dying to try it. It’s great in this pancake mix because it’s got texture as well as being good for you. It’s packed with loads of healthy things and is paleo and gluten free. Unfortunately the rest of the pancakes aren’t gluten free but you can always swap out the flour for your favourite gluten free option.

Chocolate Protein Pancakes
Serves 4
These pancakes are filling and delicious served warm with chocolate and cream as a topping.

Ingredients
  1. 1TBsp baking powder
  2. 1 pinch of salt
  3. 3tsp white sugar
  4. 225g plain flour
  5. 40g The Honest Food Co Protein Mix Chocolate
  6. 2 large eggs (beaten)
  7. Dash Vanilla Essence
  8. 30g butter (melted and cooled)
  9. 300ml milk
Instructions
  1. Mix together the dry ingredients with a whisk. This will incorporate all the ingredients evenly and add a bit of air (no sieving needed).
  2. Melt your butter in the microwave and allow it to cool while you work.
  3. In a separate bowl, whisk your eggs together with a dash of vanilla essence.
  4. Add the melted butter and milk and whisk the ingredients together until everything is well incorporated.
  5. Heat a non-stick frying pan on the stove on medium to high heat.
  6. Put 1/4C batter into the pan (you'll get 2 to 3 pancakes per pan depending on size) and cook until the batter bubbles on top. Flip over and cook for a further 2 minutes.

My pancakes are always served smothered in maple syrup and cream and if we’re feeling fancy, I chop up an Aero bar and sprinkle it on top. Sunday was a day for feeling fancy to I went the whole hog. These will make a decent amount of pancakes for 4 people without needing to double or increase the recipe. As I mentioned earlier, they are dense and filling.
