When I was at university I hosted a chip party.
We got chips from the local takeaway and then popped them in different bowls and seasoned them with anything we could think of. We had cheesy chips, cheese and garlic sauce over chips, chips seasoned with braai salt. The list went on. It was the most delicious party I’ve ever been to.
Then in August last year we went to Wellington and got to eat at Five Boroughs where they put this amazing seasoning on their chips and BAM! I was transported back to university all over again. I think I was also wearing my uni hoodie at the time so it was obviously meant to be.


Before we had even left Five Boroughs, I knew I wanted to recreate that seasoning. So the next weekend I stood in my small Auckland flat and threw things into a bowl and hoped like hell it was going to make my tummy happy.
It did.
I served these chips with seasoning next to my Coconut Yoghurt Marinaded Chicken Sliders but the seasoning is so versatile that you can use it with pretty much anything. And if chip seasoning isn’t your thing then you can use it as a dry rub on ribs or steak or chicken.

There are a few big flavours in this seasoning but don’t let that put you off! I actually made two variations of this – one with soft brown sugar and one with normal white sugar. They were both amazing in their own ways. I would use the white sugar seasoning for chips and the brown sugar seasoning as a rub because the brown sugar will clump and crystalise better.


In other news, my doctor sent me to the hospital to have an X-ray of my back because my chronic pain is not easing. - 1/4 C Salt (whatever you use to season things at home normally)
- 1/4 C Soft Brown Sugar OR Granulated White Sugar
- 2tsp Smoked Paprika
- 2tsp Granulated Garlic
- 2tsp Granulated Onion
- 1tsp Chilli Flakes (optional)
- Measure out your ingredients and pop them in a bowl, mix well.
- Keep stored in an airtight container and use when desired.
