This Valentine’s Day weekend I was whisked away by my fantastic boyfriend to a hut in the middle of the Coromandel.
Technically it’s called glamping but this is definitely at the more glamorous end of the scale! Kit and Colin were our fantastic hosts for the weekend and believe me, they have thought of everything. Kit kindly showed me around her veggie garden and sent me back to the hut with an armful of lettuce, baby carrots and other fresh produce. All of this was fantastic as we had a fully stocked kitchen with every pot, pan and utensil we could ever have hoped for.

At first I was a bit perplexed about what to cook but then I remembered that I’m actually a food blogger and I’ve owned my own food businesses so I should just put my big girl pants on and find a solution. The solution was pretty simple – salads and eggs.
I thought it might be nice to share what I cooked in the Coromandel. 
Sometimes it’s not easy to come up with simple recipes that work well in someone else’s kitchen. Hopefully these two recipes will help you out if you’re ever in the Coromandel (or anywhere else) and you need to rustle up some tasty food.

On another note, I was a bit torn whether or not to share our experience in the Coromandel at Kit and Colin’s Top Hut.
It’s so beautiful in the Top Hut. The whole experience was amazing and I would definitely go back. We spent most of the weekend relaxing and enjoying being outside of Auckland. The nights are so dark in the Coromandel with no light pollution and it’s very quiet. Kit and Colin offer a fantastic experience that you’ll never forget. 
But I also didn’t want to share this amazing untouched beauty for fear that we won’t get another booking when we want to! Hopefully that won’t be the case and we’ll make our way down there again soon. I do wish Kit and Colin all the best with this Hut and hope it flourishes for them.

Orange and Balsamic Vinegar Salad
Serves 4
This fresh salad is great for a summer evening. The orange makes it light and cheerful and it goes well with steak or chicken off the BBQ.

Ingredients
  1. 1 Medium Orange
  2. 1 Medium Tomato
  3. 3 to 4 Large Lettuce Leaves
  4. 1/2 Red Capsicum
  5. 4 to 5 Snap Peas
  6. 3 Leaves Basil
  7. 1TBsp Balsamic Vinegar
Instructions
  1. Wash your produce thoroughly.
  2. Chop or dice your produce as you see fit and pop it into a large salad bowl.
  3. Season with salt and pepper, then drizzle the balsamic vinegar over the top just before you serve.

This Mediterranean Omelette is perfect for a quick breakfast, lunch or dinner and it's packed full of protein too!

Ingredients
  1. 6 Eggs
  2. 1/2 Capsicum
  3. 2TBsp Whole Milk
  4. Salt and Pepper
  5. Butter
  6. 1/2 Tomato
  7. 2 Leaves Basil
  8. Glug of Olive Oil
Instructions
  1. Crack your eggs into a large bowl, add the milk and whisk the mixture until fluffy and light in colour. Season with salt and pepper.
  2. Finely chop the capsicum.
  3. Melt the butter in a skillet or deep frying pan.
  4. Fry the capsicum for a few minutes depending on how soft you like it.
  5. Pour the egg mixture over the top of the capsicum.
  6. Allow the egg to cook. When the egg is cooked almost all the way through (the top should be liquid and shiny still) fold the omelette in half.
  7. Serve warm topped with fresh tomato, basil and a bit of olive oil.
