Christmas is just around the corner and that means that it’s time to start panicking if you haven’t got all of your gifts already. But don’t fear too much as I’ve got a great last minute baking project to save you from trying to fight your way through Farmer’s on Christmas Eve.
This little DIY is easy to do in a pinch but also great to make in bulk and save for the whole season. Gift these gingerbread people to people at work, school or within the family. Your neighbours will love the smell and you can dress them up or down. I popped my gingerbread people into a mason jar but you can just as easily use another airtight container. Personally I love ginger and I don’t like adding icing to these gingerbread people but that doesn’t mean you can’t.

If you wanted to include a small bag of icing sugar, some food colouring and couple of different sweets then these would be great for kids.
Alternatively you could add some dark chocolate buttons and white icing for a grown up feel for your gingerbread people.
My favourite would be adding a bit of cocoa powder to your icing sugar and covering these delicious morsels with sprinkles for a lovely crunch.

You can easily make this in a food processor and mix up a huge batch. This can be divided and either frozen for later use or baked and kept in air tight containers to maintain crunch and freshness. They don’t last long so don’t be too hopeful about that but they can also be cut into different shapes by kids if you’re looking for a good Christmas time baking project to keep them busy and the decorating alone will provide hours of fun.

You will need to make sure the dough is cold before you bake it. Mine was not quite cold enough so it resulted in slightly chubby gingerbread people but according to Michael they’re body positive so it’s all good. They were very tasty and went down a treat at his office.
Investing in a cooling rack is a great idea when it comes to biscuits. This allows the air to circulate around the biscuits and stops them from going soft from trapped steam.
