We all have that one food that we absolutely love. For my mom it’s anything involving fruit. For my dad it’s anything meat based and for Michael it’s something peanut butter flavoured. For me, it’s all about the potatoes. I love chips, I love mash but most of all I love potato salad.
I’ll eat potato salad with meat at a BBQ, I’ll eat it with a picnic lunch, I’ll smear it all over a sandwich and top it with medium rare slices of cold steak. Most often I end up eating it with a spoon out of the fridge while I try to keep cool during the summer.

Potato Salad Chipotle foodblogger food foodie

While I absolutely love the run of the mill potato salad that everyone brings along to a BBQ, I also really love variations of this popular summer dish. I even talked about Jenn’s Siracha potato salad in my summer BBQ recipe round-up.
This potato salad has a slightly lighter dressing than normal with a mix of yogurt and mayo and the chipotle really helps to enhance the flavour with a smokey undertone without being hot. It’s kid friendly! No need to make two bowls of potato salad (unless you want to, that’s ok too).

I used Barker of Geraldine’s new Chipotle sauce for this potato salad and could not have loved it more. The smell of chipotle normally makes me a little hesitant to pop it on everything but Barker’s of Geraldine have made a fantastic condiment here. It smells good, it tastes good and it gave the potato salad this beautiful creamy pink colour that everyone at the BBQ commented on.

You could also make the chipotle sauce below and dip crackers in it! It went down a storm as a pre-dinner snack in my house.

Chipotle Potato Salad
A deliciously light and smokey potato salad for your next BBQ or picnic.

Ingredients
  1. 4kg Boiling Potatoes
  2. 200g The Collective Straight Up Yoghurt (or any plain, unsweetened yoghurt)
  3. 100g Mayonnaise
  4. 1 Large Onion
  5. 3TBsp Barker's of Geraldine Really Useful Chipotle sauce
Instructions
  1. Dice potatoes and boil in salted water until tender.
  2. Finely chop the large onion and pop into a large bowl with the mayonnaise, yoghurt and chipotle sauce. Stir until all combined.
  3. Drain potatoes and add to the sauce while still hot.
  4. Mix everything together, add a bit of salt and pepper to taste.
  5. Allow mix to cool before popping in the fridge for a few hours or overnight.
  6. Serve cold.
